Soursop Ice Cream Recipe: A Treat For Taste Buds

Ice cream is a summer delight! There are so many flavors to relish. Pineapple and strawberry, vanilla and chocolate, you have had scoops of them all! But have you ever tried soursop ice cream? If you are wondering how that tastes, think utterly delicious! For those of you who have not heard of soursop, it is an exotic tropical fruit. People buy soursop leaf tea , juice, pulp, and even candies.


You can make soursop ice cream easily at home. You just need an ice cream maker and the following ingredients:


  • Medium or large fresh soursop- 1

  • Soursop juice or water- 118 grams

  • Coconut milk- 220 grams

  • Egg yolks- 2

  • 35% whipping cream- 235 grams

  • Granulated sugar- 72 grams

  • Scraped vanilla bean- 1

  • Lime zest- 1


Step 1 :


Start by cutting the fruit in half, lengthwise. The spine needs to be discarded. Scoop the flesh along with the seeds and put it in a small saucepan. Pour the juice or water into the pan and put it on medium heat. Warm the flesh till the juice starts coming out. Keep a sieve handy to extract the juice. The remaining flesh and seeds will be discarded.


Step 2 :


In a large bowl, prepare an ice-water bath for later.


Step 3 :


Take a medium heatproof bowl to whisk the egg yolks with sugar.


Step 4 :


Mix the coconut milk, whipped cream, and vanilla bean in a medium saucepan and warm the mixture. After removing from the heat, pour half the mixture into the egg yolk preparation. When you pour keep whisking, for tempering the egg-sugar mixture. Now, add this preparation to the rest of the cream-milk mixture. Put it on medium heat and let it thicken.


Step 5 :


Add the soursop preparation to the cream-egg mixture while continually stirring until you get a thick consistency.


Step 6 :


Remove the saucepan from heat and immediately place it in the water bath you prepared to allow the mixture to cool. If you want to speed up the cooling process, keep stirring.


Step 7 :


When the mixture cools, zest the lime into it. It’s time to refrigerate! Cover the pan and let it sit in the refrigerator for at least 4-5 hours. If you refrigerate overnight, the flavor will be enhanced even more.


Step 8 :


Remove the vanilla bean once the mixture is chilled. Take the ice cream maker and freeze the mixture. Let it chill overnight. Do not forget to use a container that is freezer-safe.


Step 9 :


Serve chilled and ENJOY!!
